Russian Salad
Cabbage 1 medium chopped fine
Carrots 3 boiled and chopped fine
Potatoes 3 medium, boiled and cubed
Green Peas 1 cup, shelled and boiled
Apples 3 chopped
Pineapple bits 1 small can
Cucumbers 2 unpeeled, deseeded and sliced
Raisins ½ cup, soak in hot water and roast
Sugar ½ tbsp
White pepper 1 tsp, powdered
Mayonnaise 1 jar
Fresh cream 1 cup
Preparation
Combine all fruit and vegetables in a large bowl. Beat the cream and mayonnaise together with white pepper, salt and sugar and add to the salad, mix well. Sprinkle the raisins before saving. Served chilled.
